It ticks all of my food requirements (healthy, quick and delicious) and is great when you don't have much food in the house but want something yummy.
Ingredients
1 can chickpeas (garbanzo beans)
2 dollops vegan mayo
1 tbsp curry powder (add more or less according to your tastes- use less for hotter types... unless you want to combust)

large spoon
tablespoon measure (go freestyle, i usually do)
tupperware container
two arms
your mouth
Steps
- Rinse chickpeas in a sieve until no more bubbles appear, i like to think the bubbles are farts so skip this if you dare.
- Add chickpeas, mayo and curry powder to a tupperware container and shake shake shake until its all blended.
- Put it in the fridge to cool and serve!
A few variations on this include using different spices such as chipotle/ garlic/ cumin etc.
You can also crush the chickpeas with a fork and serve the mixture in a pitta/sandwich as a coronation chicken alternative.
You can also add chopped celery, sultanas, green onions or any other fresh veg you fancy.
