Quick Curry Chickpea Salad (recipe)

I've been eating this weird concoction for years now and i'm still obsessed.
It ticks all of my food requirements (healthy, quick and delicious) and is great when you don't have much food in the house but want something yummy.




Ingredients
1 can chickpeas (garbanzo beans)
2 dollops vegan mayo
1 tbsp curry powder (add more or less according to your tastes- use less for hotter types... unless you want to combust)




Equipment
can opener
sieve/small colander
large spoon
tablespoon measure (go freestyle, i usually do)
tupperware container
two arms
your mouth


Steps


  • Rinse chickpeas in a sieve until no more bubbles appear, i like to think the bubbles are farts so skip this if you dare.
  • Add chickpeas, mayo and curry powder to a tupperware container and shake shake shake until its all blended.
  • Put it in the fridge to cool and serve!



A few variations on this include using different spices such as chipotle/ garlic/ cumin etc.
You can also crush the chickpeas with a fork and serve the mixture in a pitta/sandwich as a coronation chicken alternative.
You can also add chopped celery, sultanas, green onions or any other fresh veg you fancy.
