One of my favorite veggie cookbooks has to be the River Cottage Veg Cookbook by Hugh Fearnley-Whittingstall. Previously a well known meaty chef, he disappeared and returned super fit and... you guessed it- veggie.
Although some recipes do contain eggs or dairy, they're all very easily veganized.
One of my favorites has to be his mushroom "stoup", a hearty mushroom stew/soup!
I did change up a few things like substituting celery for leeks since Adam hates celery but essentially i followed the recipe, which, you can find here!
