Mmmonday- Vegan Thanksgiving Ideas?

I'm really not pumped on the idea of celebrating Thanksgiving in the traditional sense but god damn, i love some food. As far as giving thanks, i try and do that every day.

We all know Tofurky is pretty much the shit when it comes to Thanksgiving, but i wanted to hear some of your favorite vegan Thanksgiving dishes so i can try and recreate them!

    My mom makes a BANGINGGGGGG mashed sweet potato with garlic. Oh nom nom nom. She'll be in the hospital this year, so I will try to re-create it myself.

    Gardien Holiday Roast has been my go to for the past two years. I also make the tofurkey bc you gotta have it! Haha

    I made pumpkin pie from the Plant Powered Kitchen blog last year and it was amazing! Gluten and soy free, super easy and delicious!
