Its no secret that i'm fond of making my own vegan pesto but i decided to change it up a little and try making arugula pesto. If you've not tried arugula (rocket for the Englanders out there), its a dark leafy green with a slight (black) peppery taste that is incredible in salads.
Ingredients:
- 1/2 cup pine nuts (you could use almonds or walnuts instead)
- 1 or 2 garlic cloves
- 2 cups arugula (really pack it in to your measuring cup)
- 1/4 cup nutritional yeast
- 1/4 cup miyokos kitchen aged english sharp farmhouse "cheese" (you can skip this if you don't have it, obviously)
- 1 cup olive oil
- Salt and Pepper to taste
Chuck it all in the blender and blend!
Use it on pizza/pasta/sandwiches etc.
